In the
historical winery dominating the Versa Valley from the height of the Montu Beccaria hills,
a modern fully equipped and high-tech distillery, the Grapperia, has been realized. The
dregs are distilled in the harvest period immediately after the pressing to keep the
grapes fragrance whole. The distillation by the discontinuous method of copper stills and
bain-marie allows the production of vintage grappas characterized by a clearly defined and
rich sensorial profile.
