Pinot Noir Brut Sparkling Rosè Classic Method
From a selection of Pinot Noir of the vineyards in Oltrepò Pavese; the creamy mousse is the result of a second fermentation inside the bottle as per Classic Method production regulation.
Vineyards: Owned vineyards planted with specific clonal selections are trained with the typical vertical shoot position (VSP) trainings like replacement-cane or cordon-spur. The soil is a succession of marl and clay.
Winemaking: After a soft pressing the skin remains in contact with the must for a short time. The must temperature is technologically controlled. The 12-month secondary fermentation takes place inside the bottle with the creation of the mousse. After disgorgement and corking wine is left 3 more months to ageing.
Tasting Notes: The rose mousse is creamy with fine persistent bubbles; clear pale rose colour, it has a characteristic fruity aroma at nose with typical notes of blackberry and redcurrant.
Elegant, harmonious and well balanced at palate with a refreshing acidity.
Potential for ageing: Drink now but it has potential for ageing up to 2 years.
Alcohol level: 12% Vol.
Pairing: Normally used as aperitif it can be paired also with delicately tasty food.
