Pinot Noir Brut Sparkling Charmat Method

Oltrepò Pavese is the third region in the world for Pinot Noir based wines production. The Cantina Storica Il Montù has a long tradition on Pinot Noir based sparkling wines making using both bottle and sealed tank secondary fermentation method (Classic and Charmat Method). This Spumante Brut is the result of a Charmat Method (or Martinotti Method as it’s known in Italy) production and benefits of local yeast selection.
Vineyards: Owned vineyards planted with specific clonal selections are trained with the typical vertical shoot position (VSP) trainings like replacement-cane or cordon-spur. The soil is a succession of marl and clay.
Winemaking: Pinot Noir is gently pressed and skins are immediately removed from the must. The fermented base wine is then put in a sealed tank together with a selected strain of yeast for a 6 month secondary fermentation process.
Tasting Notes: Creamy fine persistent mousse, lemon-green colour; delicate at nose unfolding floral notes, green apple and tropical fruits like banana, pineapple flavour. Dry at taste, creamy, well balanced with a long finish.
Potential for ageing: Drink it within 1 year
Alcohol level: 12% Vol.
Pairing: Enjoy it as all round meal wine but it’s also excellent as aperitif.
