Brut Sparkling Charmat Method
Both Chardonnay and Pinot Noir arrived in Italy around the half of nineteenth century and have been cultivated in Oltrepò Pavese from long time.
Pinot Noir is full-bodied, hefty, muscular; the male component of the blend.
Chardonnay is the female contribution to the blend; floral, elegant.
From the blend of those wines, after the secondary fermentation in sealed tank, comes this elegant, harmonious, velvety sparkling wine
Vineyards: Owned vineyards are trained with the typical vertical shoot position (VSP) trainings like guyot or cordon-spur. The soil is a succession of marl and clay.
Winemaking: Gently pressing and fermentation at controlled temperature.
Second fermentation takes place in sealed tanks.
Tasting Notes: Delicate persistent mousse, clear pale lemon colour, intense at nose with varietal aromas, off-dry at taste, fragrant, elegant with a youthful note.
Potential for ageing: Drink now; not suitable for ageing.
Alcohol level: 12% Vol.
Pairing: Perfect as aperitif but it can be an excellent meal closer wine.
