Classic Method Brut Sparkling Wine (Spumante). Pinot Noir Oltrepò Pavese.
In the cool darkness of our historical cellar the slow fermentation process, achieved by carefully using a selected strain of local yeasts result in this complex sparking wine.

MillesimatoGrapes: 100% Pinot Noir

Vineyards: Owned vineyards planted with specific clonal selections are trained with the typical vertical shoot position (VSP) trainings like replacement-cane or cordon-spur pruning. Marl and clay soil facilitates the flavour concentration during the growing season.

Winemaking: The grapes are manually harvested, generally some days before the full ripeness; must ferments at controlled temperature of 16-18 °C in dedicated stainless steel fermentation vessels. The base wines form different vineyards are then blended together and bottled with the addition of cane sugar and selected yeasts. The secondary slow fermentation encourages flavour development.
After 30-36 months the wine is disgorged (“degorgement”) and the liqueur d’expédition is added to the wine that is finally sealed with the classical cork and secured by wire cage.

Tasting Notes: Golden medium clear with a creamy persistent mousse, at nose notes of bread, tropical fruits (banana, pineapple) and roasted hazelnut are developed; the harmonization of creamy foam, acidity and sugar content results in a perfectly balanced wine

Potential for ageing: Drink now, but has potential for ageing up to 5 years.

Alcohol level: 12% Vol.

Pairing: It’s excellent with fish or shellfish courses but also with white meat.
To consider also as aperitif.
