Pinot Noir Brut Sparkling Classic Method
In the cool darkness of our historical cellar the slow fermentation process, achieved by carefully using a selected strain of local yeasts, takes place inside the bottle and encourages the development of delicious and refined flavors resulting in this complex sparkling wine.
Vineyards: Owned vineyards planted with specific clonal selections are trained with the typical vertical shoot position (VSP) trainings like replacement-cane or cordon-spur pruning. Marl and clay soil facilitates the flavour concentration during the growing season.
Winemaking: Soft pressing of the grapes and primary fermentation at controlled temperature are made to obtain the base wines which are then blended and bottled for the secondary 12 month fermentation which occurs thanks to selected yeast and provides the wine with the creamy bubbles.
After disgorgement and corking wine is left 3 more months to ageing.
Tasting Notes: Creamy foam, fine persistent bubbles, lemon-green colour, medium intensity at nose, clean, with fruity characteristic. Dry at palate, well balanced, with high flavour intensity and elegant texture.
Potential for ageing: Drink now but has potential for ageing up to 18/20 months
Alcohol level: 12% Vol.
Pairing: Normally used as aperitif it can be paired also with delicately tasty food.
